We are very proud to present you this new product of our land, Qafiz, the organic extra virgin olive oil. This name represents a traditional measure of volume, which has been handed down to us from the Arab domination, and which is still used in Sicily, with the term “cafiso”, as a unit of measurement for oil. Our oil is the fruit of a variety of olive, called Tonda Iblea, characteristic of eastern Sicily. The olive harvest takes place exclusively by hand, in October. The milling of our olives takes place on the same day as the harvest, to ensure that the oil also maintains all its organoleptic qualities. The oil is cold pressed, and it is thanks to this technique that we are able to preserve the quantity of minerals, vitamins and substances rich in antioxidant properties for the body.
