Provola is a typical Ragusan stretched curd cheese, one of the most famous in Sicily, which has the classic “pear” shape. Stretched curd cheeses are characterized by the spinning process that takes place using hot water at 70-80 ° C, and which precedes the last and most important stage of production, namely shaping. This takes place exclusively manually, piece by piece, in order to guarantee the characteristic shape, which is also the distinctive feature of this small work of dairy art.
