Canestrato is a typical Modica cheese with a pressed paste, with a thin rind and a straw yellow color. It has a cylindrical shape, with faces where it is possible to observe the grooves left by the characteristic baskets, equipment used during its production. Our company produces, in addition to white canestrato, canestrato with black pepper, chilli and pistachio.
